The nose opens with freshly baked Victoria sponge, curry leaves and cinder toffee, with tinned peaches and warm gorse flower developing with time in the glass. These notes continue onto the palate, but are joined by lemon zest, molten honey on toast, marmalade and vanilla pods, with wood polish and marzipan appearing on the back palate. On the finish, waves of honey and spicy oak linger, with fruit-salad chews appearing after a minute or so. This is an excellent dram for a warm summer's day.
Product Information
Daftmill is a farm distillery. Owned and operated by the Cuthbert family, it only runs in the farm's quiet periods; mid-summer and winter, sometimes producing as few as 100 casks per year. When not distilling, Francis Cuthbert looks after the estate, growing the malting barley used to make this Lowland whisky. Distilled from clear wort in the summer of 2006, with a slow distillation regime, very high and narrow cut points we collect the lightest most delicate flavors from our barley malt. This bottling contains whisky from 7 first fill bourbon barrels. Casks 067/2006, 068/2006, 069/2006, 070/2006, 071/2006, 072/2006, 073/2006 which were all filled at the end of our summer season on the 30th September 2006. Bottled exclusively for the USA.
